Steamed foods are really delicious and healthy. It is very good for school going children and all in the home.
Let us view how the South Indian Idli is made and served with Sambar and Chutney.
Raw rice : 3/4
Boiled rice : 1/4
Soak the two together for 5 hours.
Urad dal (black gram): 1/4
Soak it separately for half an hour.
Grind the rices adding enough water till it becomes a dough ( not too thick or too loose) keep it separately.
Grind the urad dal finely and keep it aside.
Mix it properly with salt and keep for 7 hours (overnight) for fermentation.
In the morning we will get a good fermented dough and we can make idlis with it. Take small quantity of water in a pressure cooker( for steaming) and boil it. Transfer sufficient dough to the idli maker and boil it for 10 minutes. You will get tasty and healthy idlies. It is to be served with Sambar and chutney.
Coconut : 100gm. (grated)
Kashmiri chilly : 3no.
Small Onion : 4 no.
Ginger ; Small pinch.
Curry leaves : Small pinch.
Salt : to taste.
Grind it finely. Add a little more water and warm it;( do not boil it).
Take one table spoon oil and boil it. Add two onion (cut it), curry leaves and mustard. Lightly fry it until the mustard cracks, put it over the warm chutney.
